One Pot Chicken Vegetable Rice

One-Pot Chicken Vegetable Rice



Ingredients:

Rice
Fresh Boneless Chicken (Cut)
Vegetables: (Carrots, Onion, Cucumber/your choice)





  



Sauce:

Pepper (Kpapko Shito)
Garlic
Ginger
Onion
1 stock cube
1 teaspoon olive oil (your choice)

 

 Method:

1. Wash rice and bring it to boil for about 5 minutes.


2. Layer diced/cut chicken on top of the rice while it's still cooking and hard. The chicken will cook with the rice. (No need to season chicken but you may if you wish)


 3. Mix rice and chicken together when rice is tender and chicken is cooked.


 4. Layer the vegetables on top of the rice now and allow it to cook for a few minutes. You don’t want to overcook the vegetables so add vegetables only when rice is tender and chicken is cooked.


 5. Mix vegetables together with rice and chicken and allow leave on fire with very low heat and your one-pot chicken vegetable is ready to serve.


6. Serve with any sauce or gravy of choice.


 

Note:

It's a complete meal but you can serve with extra protein if your chicken is not enough or if you desire your dish to be moist add extra gravy or sauce.

Sauce

Mix all ingredients together in a blender and blend till smooth.
Serve with your rice. The amount of pepper depends on how spicy you want it.

Wheat stir fry

Wheat Stir fry

Today we are making a quick meal. Wheat can be a very filling and great meal when you are trying to cut down on how much to eat.

 

Ingredients

  • Leftover Wheat 
  • Spring onions (chopped)
  • Sausages (chopped)
  • Fresh Eggs
  • Sardine 
  • Carrots (chopped)
  • Any other vegetable of choice

Method

  • Heat pan and stir fry sausage with very little or no oil at all.

  •  Add carrots, spring onion, and other vegetables.

  • Add a tin of sardine or tuna of choice. 

  • Stir in the eggs



  • Finally, add your leftover wheat and mix all together


 

  • Food is ready, enjoy

Baked Mashed Yam

Baked Mashed Yam

Ingredients:
8 medium sized slices of boiled Yam
2 fresh eggs
2 tablespoon of butter
Seasonings of your choice
Chopped spring onions

 

Method: 
  
1.   Mash boiled Yam with butter to become fluffy.


 


 
2.     Mix with Spring onions and seasonings.



 
 

   4. Using fork, with mashed yam mixture with eggs to form a dough. 
 


 
5. Grease your pan, meanwhile pre-heat your oven, if you use halogen oven, no need to pre-heat.





6.     Shape your dough into balls and lay them onto baking tray.

 


 
7.     Bake for 10 to 15 minutes until it’s golden brown on the outside.

 


 
8.     Serve with a any gravy and protein of your choice. 

 




Note: This is a dry dish and it needs a very moist sauce or gravy to go with it.
